Chili is another recipe like marinara sauce that I don’t measure anything for anymore. But it can be nice to have a starting place, so you can learn your own preferences as you make adjustments.
one. In a very large pot, heat a bit of oil and sauté:
1 medium onion, diced
4 zucchini, diced
4-5 cloves garlic, minced
two. Add, break apart into chunks and cook until no longer pink:
3 lbs. ground turkey
three. Stir in until fragrant, about 1 min:
3 Tbs. chili powder (I use a mix of traditional chili powder and hot chili powder)
2 Tbs. cumin
1 Tbs. dried coriander
four. Add in:
2-3 cups (2 cans, drained and rinsed) kidney beans
1-2 cups (1 can, drained and rinsed) black beans
1 15 oz. can diced tomatoes
2-3 cups tomato sauce (1-2 15 oz. cans)
five. Bring to a simmer and allow flavors to meld for at least 15 minutes. Taste chili and adjust spices to taste.
six. For best flavor, allow to slowly cook for a while longer. Serve with some shredded cheese on top, if desired, and cornmeal muffins.
